Between Cooking Therapy, healthy nutrition plans of 1400 cal and the revenge of female CheFs, Cook has also chosen to talk about one of our favorite products: Il Ruché.
The history of Ruchè
Perhaps of Spanish origin, Ruchè owes its Italian success to Don Giacomo Cauda who, having arrived in Castagnole Monferrato in 1964, did not appreciate the wine produced in his 3 hectares of Grignolino and Barbera.
The parishioners informed him that in the middle of the vineyards of Barbera and Grignolino, there was also Ruchè: aromatic and characterized by particular olfactory deviations. The following year he opens an leftover demijohn of that wine that he had not convinced him much, he tastes it and finds it interesting. So he decided to experiment and the first hectare of Ruchè was planted.
From here begins the rise of the Ruchè initially offered to the villagers in the patronal feasts, it was soon planted and vinified by winemakers in the area, making it known even outside the territory of Castagnole Monferrato, up to the recognition in 1987 as a DOC product and in 2010 DOCG.
Organoleptic characteristics of Ruchè
Ruchè comes from the black grape variety that bears the same name and is grown in the territory of only seven municipalities in Asti: Castagnole Monferrato, Montemagno, Grana, Portacomaro, Refrancore, Scurzolengo and Viarigi.
It has a medium-sized grape and is rich in sugars and aroma precursors. Characterized by a ruby color, the nose is reminiscent of dried rose, violet and spices. The taste is reminiscent of blackberries, raspberries and ripe plums, with hints of spices such as black pepper.
How to pair Ruchè
Like many red wines it is perfect for typically local dishes: aged or blue cheeses and meat main courses with particularly complex flavors. It can be easily combined with foods rich in aromas and spices such as ginger, and therefore with typical dishes of oriental cuisine, or with spicy dishes.
For the most courageous and enterprising, we recommend enjoying it with tuna-based dishes!
