I grew up in the city of "Baci Gallina". I think I had a really happy childhood for that too. I remember well the Christmas period when I attended G. Galilei scientific high school and together with the school newspaper I distributed these delights with my classmates! And what a feast!
What are "Baci Gallina"?
Baci di Gallina are lady's kisses with a unique recipe of its kind. The ingredients are simple yet blended by the expert hands of the Gallina family they become a real delicacy: the raw materials are of high quality, from the strictly Piedmontese hazelnut (called the "tonda gentile delle langhe") which is recognized for its fragrance and its inimitable taste, the chocolate that is chosen among the best companies on the market and the butter that is produced in the Cuneo area famous for its dairy cows, all these choices allow us to offer customers a qualitatively valuable product.
In 1906 Giuseppe Gallina began his activity as an apprentice in the Chiabrera pastry shop in Alessandria and then moved to Turin in 1910.
After a few years of apprenticeship with other peers he moved to Naples in the laboratory of maestro Coccia (author of several books on sweets) where he refined his pastry art.
After an interlude at the front during the First World War he returned to Naples for a period and then moved first to Rome and then to Genoa, where he married. Later he decides to return to Alessandria where he will open a small workshop on his own in via Palestro. A few years later his son Lorenzo also came to help him, to whom he handed down the art of pastry.
In 1968 Lorenzo moved permanently to via Vochieri 46, where with his wife Anna he expanded the business that continues to this day with his sons Giuseppe, Fulvio and Angela and recently with his nephew Emilio.
With Emilio we thus arrive at the fourth generation of Gallina pastry chefs.
Tradition is their strength
This pastry has its roots in the purest tradition of Piedmontese pastry, where all its products are faithfully processed according to ancient recipes.
The valuable product of this pastry is the "Baci Gallina", processed as tradition dictates by the skilled hands of the pastry chefs and which contain all the flavor and scent of our land.
Even the packaging is handcrafted, in fact, as per tradition, each bag and each box is filled with kisses, still hand-wrapped by the orders Giuliana, Angela and Margherita.
All this combined with kindness and respect for the customer creates the basis for the success of the Gallina pastry shop.
